This is probably the most simple recipe I have ever tested. For something so simple it really has such great flavor and has quickly become my go-to side dish for summer gatherings. It’s a crowd pleaser for sure and something that even kids will enjoy.

Ingredients
- 2 large apples, 1 red and 1 green cut into matchsticks
- 1 1/2 tbsp fresh lemon juice
- 3 cups matchstick sut carrots
- 1/4 cup chopped chives (optional)
- 1 tbsp olive oil
- 1 tsp sugar
- 1/2 tsp table salt
- 1/4 tsp freshly ground black pepper
- 2 oz. feta cheese, crumbled
When you are chopping your apples, make sure they are cored and thinly slice into matchsticks. When it comes to the carrots, some grocery stores carry carrots already cut into matchsticks. I just cut them on my own because I always have carrots in the house but if you don’t use carrots often it might save you some time.
Step by Step Instructions
Step 1
In a medium skillet, sauté garlic and onion until fragrant and cooked through.
Step 2
Add cooked pasta, arugula, and olive oil to skillet.
Step 3
Toss in skillet on low-medium heat until arugula is soft.
Step 4
On a greased baking sheet, bake seasoned salmon in the oven for 8-12 minutes at 375 degrees. Rest salmon for 10 minutes before serving.
Step 5
When the pasta is done feel free to add parmesan to taste. All that is left is to plate and serve. Enjoy!
