No one tells you how long spring semesters feel in college. It’s always freezing cold and snowy the first two months, which makes it hard to have motivation to leave your apartment at all, let alone have the energy to cook.
Knowing this, I have gone through my recipes and cookbooks and tried to pick out the easiest (and warmest) recipes I can find to help all of you find some joy in all of this gross weather.
A couple of my favorites that will be included are:
- Curried Cauliflower Soup
- Tortellini Minestrone
- Beef Stew
- Skillet Chicken and Rice
- Skillet Shepard’s Pie (maybe not the most healthy I’ll admit but everyone deserves a cheat day)
My goal is to photograph at least one meal a week so you guys can see my end result, however, I must admit that the lighting in my apartment is not particularly helpful when it comes to photography.
Also, full disclosure I am gluten free myself. While most of these recipes are not gluten free, I will be converting them as such just so I can enjoy all of these delicious recipes that I’m testing out for all of you.
